Khinkali


Khinkali is a Georgian dumpling, which originated in the Georgian mountain regions of Pshavi, Mtiuleti and Khevsureti. Varieties of khinkali spread from there across different parts of the Caucasus.  They are similar to Chinese soup dumplings.  Typically stuffed with beef and pork, they amass a lovely broth as they cook. As to not get covered in broth while eating, you hold them from the little "handle" at the top and take a small bite toward the top.  This allows for the inside to cool so you can slurp out the broth and then bite off the bottom, leaving the "handle" - a means to track how many you have eaten!
